Trois Années Cuvée

Trois Années Cuvée is a beer project 3 years in the making that is all about patience, nature, blending and luck. Each March when the nights are cool and LA air gets cleaned by the rains we brew a beer to start fermentation spontaneously with the outside air before going into oak barrels to become sour, funky and earthy. Three years of these spontaneous barrels goes into this blend along with a year-old oak foeder-aged Belgian-style ale to give a complex aroma and flavor. This wild ale encompasses brewing traditions that look to nature’s mysteries.
