StyleBarrel aged Sour
Our newest sour release is Juniper Bay Paradiso. We added the botanicals Juniper, Bay leaves and Grains of Paradise to a year-old barrel-aged sour that has similarities to a London-style Gin but extra tart. The barrel aging with botanicals and mixed fermentation cultures add spicy, herbal qualities mingling with and interesting tartness, oak and nuanced barnyard character. Just think of paradise in a bay filled with juniper trees.
